Am unable to view the photos. I am looking for a guide to remove and replace the extractor on my cf380.

It's easy. Look at the slide above the extractor. There's a hole (and one just like it on the underside). Tap out the bent pin hiding in that hole paying attention to which way the bend is facing. Remove extractor & spring (they'll just fall out). Now put it back together with the new parts.

Does it make any difference whether to tap the pin out from the top or bottom?

Nope, but if done from top there's less chance of chipping the slide finish when the pin pokes out.
