Looks like I am going to marinade the meat in some really nasty wine, and do fajitas tomorrow. I have another package in the freezer. I picked up some sesame seed oil, Kikkoman Sezchuan cooking sauce, and some Tsang Bangkok peanut sauce.
I've got a folder full of recipes I've tried and tweaked to my liking. Some went over well with the boys, others not so much.
Shoyu Teriyaki Sauce/Marinade
2 cups water
2 cups soy sauce
2 cups sugar (calls for sugar but I use sweetener being diabetic)
2 Tbsp minced garlic
2 inches fresh grated ginger (or 2 tsp of the powdered stuff)
1 Tbsp oil
Soy, water, sugar in a pot and slowly bring it to a boil. While that is heading up sauté the garlic and ginger until it just starts to brown.
**If you're using powdered ginger add it to the sauté pan at the very end or it will scorch and ruin the sauce.**
Pull the garlic and ginger and add it to the pot. Bring it to a full boil then drop to a simmer for 30 minutes.
After that you can keep reducing it for a glaze or chill it down and use it as a marinade.
